Saffron is the most valued spice, having importance in medical, food, cosmetics, aromatic & confectionary industries for value addition. Saffron market size is projected to grow @ of 8.5 CAGR to 1.6 billion by 2027, but unfortunately saffron is mostly adulterated by dangerous dyes Erythrosine, tartrazine, Rhodamine-B & Magenta III, density enhancers Glycerine & non saffron plant material Maize corn, safflower & sugar beet for commercial gain, also unavailability of quality testing commercial kit is the formidable task to identify pure and fake saffron. Any type of compromise on the quality of saffron would lead huge negative impact on socio-economy of farmers, industrialists and health of people consuming saffron or saffron based products. Idea & project plan: The proposed kit will be novel, cheap, rapid, easy, accurate & involves a two-step process, one is chromatogram-based approach to validate if colours and density enhancers have been added and second to check if pure saffron is mixed with other planting material through binding with crop specific antibodies i.e. Zein, CtPOD2,& BvADH? . The prototype will be developed for detection of major saffron adulterants & validation of proof of the concept within 18 months of time.
